Ryotei Nagasaka offers a style of dining that is increasingly rare: every party is seated in a private tatami room equipped with its own traditional sunken hearth, or irori. The experience is built around this feature. Staff set skewers of seasonal ingredients to cook slowly over perfectly managed charcoal, presenting a steady sequence of dishes that you eat straight from the hearth. This ritual is the restaurant's defining feature and what draws guests back.

Reviewers consistently praise the carefully prepared, homely flavours. The star of the show is often the slow-roasted, roe-filled sweetfish (ayu), alongside crispy head-to-tail prawns, grilled wagyu, and chewy yōmo gi nama-fu (mugwort-flavoured wheat gluten). The meal often concludes with a rich crab and rice dish (kani donabe) cooked in an earthenware pot. Many guests describe the set courses as surprisingly plentiful and representing astonishing value for the quality and quantity of food served.

However, the open hearth that makes the experience special can also be a drawback. Several guests note that the rooms become uncomfortably hot during summer. A few also mention occasional brusque service, strict enforcement of closing times, and a bit of ash or dust from the charcoal.
