Imoto (井本) is a highly regarded counter restaurant in Fukuoka's quiet Yakuin district where the discipline of Kyoto kaiseki meets the bounty of Kyushu. The philosophy is one of restraint and purity, built on a clean, kelp-driven dashi and a deep respect for seasonal ingredients. The experience is intimate, with just ten seats at a counter, where each course is presented on carefully selected antique tableware.

The only option is a seasonally rotating omakase menu. Reviewers consistently praise the quality of the produce, from pristine sashimi of red sea urchin and sea bream to steamed abalone and grilled natural unagi from the Chikugo River. The chef is also known for inventive dishes that highlight a single ingredient, such as steamed conger eel in bamboo leaves or a delicate dumpling of crab and cream. The sake pairings are expertly chosen to complement the subtle flavours.

The experience comes at a high price, and some diners have questioned the value, finding the meal underwhelming for the cost. A few guests also noted that the service can feel reserved or distant, and the discreet entrance with minimal signage can make the restaurant difficult to find.

Expect the omakase to cost between ¥40,000 and ¥50,000 per person for lunch or dinner. Reviewers in 2025 and 2026 reported final bills of ¥71,500 and ¥89,200 for two people, respectively. Note that drinks are charged separately and can add significantly to the total.
