Japanese Cuisine Tobi Ume (日本料理 TOBIUME) is one of Japan's most exclusive dining experiences: a single-table restaurant in Kitakyushu serving just one party of two to four guests for lunch and dinner. This intimate setting allows chef Tashiro and his wife to provide a deeply personal service focused on a strict 'North-Kyushu terroir'. The monthly menu is built around live, ultra-fresh seafood and rare local produce sourced from the region, such as prized Oma bamboo shoots and rich red uni.

Guests consistently praise the kitchen's precision, from the foundational dashi made with Rishiri kombu and freshly shaved honkarebushi to the flawless cooking of seasonal fish like hamo (daggertooth pike conger) and sawara (Spanish mackerel). The experience is often described as theatrical, culminating in rich crab or zosui (rice soup) finishes. Another major highlight is the beverage pairing, which offers unusually generous access to a deep cellar of rare and sought-after sake, including Juyondai, Aramasa, and Kokuryu, alongside fine wines.

The single most significant challenge is securing a reservation. The restaurant's own listing and numerous recent reviews confirm that it is not currently accepting bookings from new customers. While the restaurant states it does not operate on a formal referral basis, access is in practice limited to established patrons, making it unavailable to the general public.

For those able to dine here, reviewers find the experience offers excellent value. Omakase courses were reported in the ¥24,000–¥33,000 range in 2024–2026, with drink pairings around ¥9,000. A typical total bill per person, including a 10% service charge and tax, was approximately ¥47,000.

  • Booking: Reservations are required. However, the restaurant has a stated policy of not accepting any new customers, making access for non-regulars effectively impossible.
  • Access: The restaurant is located in a residential area in Chiyo, about a 10-minute taxi ride from JR Orio Station.
  • Seating: There is a single table for one group of 2 to 4 guests per service.
  • Payment: Credit cards (VISA, Master, JCB, AMEX, Diners) are accepted. Electronic money and QR code payments are not. A 10% service charge is added to the bill.
  • Language: Service and explanations are in Japanese.
  • Parking: Limited parking is available.
  • Children: New customers are not permitted to bring children.
  • Smoking: The entire restaurant is non-smoking.
