Kiku Zushi (菊鮨) is an intimate, 10-seat counter in a quiet residential part of Kasuga, Fukuoka, that has become a destination for sushi lovers across Japan. The focus is a single omakase tasting menu showcasing the best seafood from the waters of northern Kyushu. Chef Tsuyoshi Seto's approach is ingredient-forward and theatrical, creating a memorable experience that is as much about the performance as the flavour.

Guests consistently praise the balance and quality of the meal, particularly the red-vinegar shari (sushi rice), which is tailored to each piece of fish. Standout dishes that appear frequently in reviews include presentations of Ise lobster (Ise ebi), multiple preparations of rich red sea urchin (aka uni), and tender steamed abalone (mushi-awabi) served with a sauce made from its own liver. Other highly rated items are the savoury hair-crab egg custard (kegani no chawanmushi), steamed black-throat seaperch sushi (nodoguro no mushi-zushi), and perfectly cooked kuruma prawn. Diners note the chef's calm, precise movements and the warm, attentive service from the staff.

The main drawbacks are practical. Reservations are notoriously difficult to secure, often requiring booking months or even a year in advance. The location in a residential area can also be tricky to find for first-time visitors. A few diners have found the vinegar in the rice stronger than their personal preference, and service can occasionally start late or feel slow-paced due to the elaborate course structure.

Expect to spend between ¥20,000 and ¥29,999 for dinner or lunch. Reviewers in 2024–2026 reported paying between ¥22,000 and ¥29,700 for the full omakase. Despite the high price point, visitors almost universally describe Kiku Zushi as excellent value, given the quality of the ingredients and the level of craftsmanship.
