Teru Zushi (照寿司) is not just a sushi restaurant; it's a stage for chef Takayoshi Watanabe's exuberant 'sushi theatre'. Located in the city of Kitakyushu, it has become a destination for diners from around the world who come for a high-energy performance where premium seafood and showmanship go hand in hand. The experience is interactive, full of photo opportunities, and led by the chef's larger-than-life personality.

Guests consistently praise the exceptional quality of the ingredients, such as red sea urchin (uni) from Aijima, black abalone, and large kuruma-ebi prawns. The meal is a succession of dramatic presentations, including signature items like a decadent handroll of tuna, uni, and caviar, and the famous 'unagi burger'. A seasonal highlight is a large longtooth grouper (kue) hot-pot, often presented with a miniature butchery demonstration. The portions are noted to be very generous.

However, the style is not for everyone. The sushi rice (shari) is seasoned with a strong red vinegar (akazu), which some diners find assertive.   • Booking: Reservations are essential and must be made well in advance via the OMAKASE booking platform, with prepayment required. Walk-ins are not possible.
  • Getting There: The restaurant is in a residential area of Kitakyushu. From Hakata Station, take the Shinkansen to Kokura Station (17 min), followed by a 20-minute taxi ride. Alternatively, it's an 8-minute taxi from Tobata Station.
  • Seating: There are 10 counter seats. The meal service starts at the same time for all guests, so punctuality is crucial.
  • Payment: Major credit cards (Visa, Master, JCB, Amex, Diners, UnionPay) are accepted. Electronic money and QR code payments are not. A 10% service charge is added to the bill.
