Canigene Kita no Hanare (かにじぇんぬ 北のはなれ) offers a highly personal and theatrical crab experience in Sapporo. The concept is built around just two private rooms, where a dedicated chef presents a live crab to your party before preparing it in a multi-course meal right before your eyes. It is an intimate performance of Japanese culinary craft focused entirely on a single, perfect ingredient.
Guests choose their star ingredient—typically a live taraba (king crab), kegani (hairy crab), or zuwai (snow crab)—which is then masterfully transformed. The meal is designed to showcase every texture and flavour of that one crab, with preparations that reviewers consistently praise: sashimi served at three different levels of doneness, boiled claws, charcoal-grilled portions, shabu-shabu, and a rich crab cream croquette. The experience often concludes with steamed crab and a comforting bowl of Yumepirika rice topped with ikura (salmon roe).
The absolute freshness and sweetness of the crab is the main highlight for visitors, including many from outside Japan. However, a minority of reviewers note that the service can feel rushed, with courses paced to fit a strict two-hour seating limit. While many international guests have excellent experiences, some mention that staff may have limited English.
This is a special-occasion destination, with prices to match. Reviewers in 2024–2026 reported paying around ¥50,000–¥60,000 per person for the live king crab course, while a hairy crab course was noted at about ¥40,000. Prices are subject to market fluctuations (時価, jikasei). While not a casual meal, most find the price justified by the rare spectacle of tableside live crab preparation and the exceptional quality.
