Guests consistently praise the inventive and flawlessly executed courses. The signature dish is a fritter of kasube (skate cheek), coated in black squid ink for a dramatic presentation, revealing a warm, tender interior. Other standout dishes include an 18-month aged Maekuin potato gratin, rich beef cheek stews, fresh abalone and rock oysters, and seasonal fish like tokishirazu salmon.
