Its reputation is built on a single, addictive creation: the oil-kasu salt tsukemen. The dipping broth is a masterclass in balance—a clean, deeply savoury salt base is streaked with the fragrant oil and crispy texture of kasu (fried beef and pork offal), creating a flavour profile many regulars call unique.
Guests consistently praise the interplay of textures. The house-made, medium-thin noodles are smooth and springy with a satisfying, soba-like slurp. The broth itself is described as a 'treasure hunt' of meats, containing tender chashu pork, flavourful chicken neck (se-seri), and sometimes beef.
