Respiracion (レスピラシオン) is a celebrated restaurant in Kanazawa that reinterprets Spanish cuisine through the lens of hyper-local ingredients from the Hokuriku region. Set in a restored traditional townhouse (machiya), the experience begins in a herb-tea waiting room, setting a tranquil tone for the meticulously paced meal to follow. The tasting menu is a showcase of culinary theatre, where chef's creativity and a deep respect for seasonality are on full display.

Guests consistently praise the entire performance, from the iconic amaebi (impact shrimp) amuse-bouche to the seasonal paellas, which might feature hotaru-ika (firefly squid) or kegani (horsehair crab). Main courses like venison or even bear (kuma) are noted for their expert preparation. The service is frequently described as impeccable and warm, with staff making an effort to provide English explanations for dishes. A major highlight for many is the sommelier's work; the wine pairings are considered a narrative climax to the meal, featuring daring choices like aged koshu sake alongside classic Mourvèdre.

Criticism is minimal and rare, usually limited to minor communication issues around the wine pairing options or a feeling that the tightly choreographed service was slightly impersonal. A very small number of diners felt one or two dishes didn't reach the same 'wow' factor as the rest of the menu.

Expect to pay for the experience. Reviewers in 2024 reported the main tasting menu, 'Course Respiracion', was around ¥26,000 plus a 10% service charge. The shorter four-glass wine pairing was quoted at ¥12,800. Total bills for two people ranged from approximately ¥30,000 to ¥75,000, depending on drink choices. Most diners felt it represented excellent value for the level of creativity, quality, and service.
