Soan (草庵) is a destination for soba lovers, set within a beautifully renovated 150-170-year-old traditional house (*kominka*) in Hakusan city. Its reputation, backed by multiple Tabelog Top 100 awards, is built on exceptional house-milled noodles and a tranquil, rustic atmosphere.
The star of the menu, praised by nearly every visitor, is the Kamo Seiro: cold soba served with a hot, intensely savoury dipping broth. This is no ordinary dip; it’s loaded with thick-charred duck slices, a fluffy duck meatball (*tsukune*), grilled onions, and a generous amount of mushrooms. The noodles themselves, available as 100% (*juwari*) or 90% (*kyuichi*) buckwheat, are celebrated for their fine, firm texture and delicate aroma. The crisp, light tempura in the Ten Seiro is another popular choice, and many guests also praise the rich, creamy noodle-cooking water (*soba-yu*) served at the end of the meal.
The main drawback is Soan's popularity. Waits of 30 to 90 minutes are common, and the restaurant often sells out and closes before its official 3:00 PM end time. While the food quality is rarely questioned, a few diners find the prices for side dishes, like the rolled omelette, a bit high for the portion size.
Despite the wait, most agree the experience offers good value. Reviewers recently paid around ¥2,080–¥2,280 for the signature Kamo Seiro or the Ten Seiro (tempura soba). A side of Dashimaki Tamago (rolled omelette) was about ¥1,100–¥1,200. For the quality of the duck and the craft of the house-made soba, it's considered a worthwhile indulgence rather than a simple, cheap noodle lunch.
