Hinode Seimenjo (日の出製麺所) is not just a restaurant but a working noodle factory, or seimenjo, that has become a site of pilgrimage for udon lovers. Its reputation rests on a simple, uncompromising premise: for just one hour a day, from 11:30 to 12:30, it opens its doors to serve the very noodles it produces, ensuring a freshness that is second to none.

The experience is defined by the noodles themselves. Reviewers consistently praise their glossy appearance, pronounced wheat aroma, and perfect mochi-mochi (springy and chewy) texture. The first hundred or so bowls of the day are often made with a special local wheat called 'Sanuki no Yume'. The menu is simple, designed to let the noodles shine. Many recommend starting with a plain bowl with soy sauce before trying another style. Popular orders include cold (hiya), lukewarm (nurui), and kamatama (hot noodles with a raw egg).
