This signature dish is complemented by two other preparations that showcase the ingredient's versatility: a delicate, melt-in-your-mouth boiled tongue (yude-tan) and a rich, deeply savoury braised version (nikomi).

The charcoal-grilled version is the star, but the boiled and braised preparations are considered equally essential to the experience.
