Jikaseimen Tenka (自家製麺 てんか) has earned a devoted following for one main reason: its soupless tantanmen. This isn't a typical bowl of ramen. The experience is built around exceptionally thick, chewy noodles made in-house, which are served with a punchy, spicy meat-miso sauce and a topping of crunchy crushed nuts. You are meant to mix everything thoroughly and eat about two-thirds of the bowl. Then, you ask the owner for a 'soup-wari'—a ladle of hot broth that transforms the remaining portion into a second, completely different dish.
Reviewers consistently praise the quality and texture of the house-made noodles (自家製太麺), which stand up to the intense, umami-rich sauce. The curry-tantanmen variation is also popular, as is the 'tokusei' (special) version with extra char-siu and a soft-boiled egg, though it's not always available. The generous portions are frequently highlighted as providing excellent value for money.
The main drawback is the wait. With only six or seven counter seats and an owner who often runs the shop alone, turnover is slow and queues are common. Some diners find the sauce a little too sweet or the spice level quite high, and the small, quiet space can feel a bit awkward.
