Tonkatsu Souki (とんかつ 蒼樹) is a low-temperature tonkatsu specialist in residential Saido, Yokohama, and was selected for the Tabelog Tonkatsu 100 for 2026. The kitchen slowly fries brand pork in copper pots. Most of it is Hayashi SPF, alongside rotating breeds such as Zeiton, a Mangalica × Duroc cross. The result is a pale, coarse-crumbed crust around a faintly pink, very tender centre. Every set comes with rice cooked to order in your own hagama iron pot and timed with an hourglass, so the rice gets as much care as the pork.
Reviewers almost unanimously praise the tenderness and sweet fat of the pork. The hire (fillet) is singled out again and again, and the shatonburian, a rare fillet-tip cut, is described as tender enough to eat without teeth. The pot-cooked rice and the hearty tonjiru (pork and root-vegetable miso soup, with free refills) draw nearly as much praise. The sasami katsu (chicken-breast cutlet) surprises many guests. Diners also like the wood-lined room and seasoning the katsu with two different salts.
A recurring minority found the service curt or pushy, overheard staff being scolded in the open kitchen, or felt hurried near closing. One diner reported poorly washed crockery. The fatty loin and the pink centres are too rich for some, and premium cuts often sell out.
Lunch typically costs ¥3,000–3,999 and dinner ¥4,000–4,999. In 2025–2026, reviewers paid around ¥2,700 for the weekday-only Sōki lunch with three cutlets and ¥3,500 for the five-cutlet version. They paid ¥2,900 for the Zeiton loin set, ¥3,700 for Hayashi SPF rib loin with fillet, ¥4,000 for the shatonburian set and ¥4,700 for Zeiton rib loin with fillet. Sasami katsu added about ¥650 and a local pale ale ¥900.
This is not cheap tonkatsu, but most reviewers consider the price fair for the meat, the rice and the refills. One diner who had compared several low-temperature specialists called it notably good value. A few longtime regulars feel recent price rises have pushed it beyond everyday dining.
