In the quiet hills of Uda, Nara, Ichin yoan (一如庵) offers a distinctive soba experience inside a beautifully remodelled traditional Japanese house, or kominka. The restaurant is known for its vegetable-centric approach, pairing high-quality soba with creative seasonal produce.
The two main attractions are the soba itself and a unique vegetable sushi. The noodles are thin, delicate, and made from nearly 100% buckwheat, praised by diners for their excellent texture and flavour, served with a choice of wasabi or spicy daikon. The other must-try dish is the seasonal 大和菜寿司 (Yamato-na-zushi), a type of box-pressed oshizushi featuring ingredients like eggplant or shiitake mushrooms wrapped in yuba tofu skin. Guests also consistently recommend the seasonal vegetable tempura for its light, crisp batter, as well as the warm sobagaki (buckwheat dumplings) and house-made fruit enzyme juices.
However, visitors should be aware of some practicalities. The full menu is often unavailable to walk-in guests, who may be limited to ordering soba only. The popular vegetable sushi and tempura can sell out early in the day.
