Okinawa Soba Marukami: Housemade Noodles and Bonito Broth

On the small island of Kurima, a short drive across the bridge from Miyako-jima, Okinawa Soba Marukami (沖縄そば まるかみ) has become a destination for noodle lovers. What sets it apart is a remarkably clear yet deeply layered broth made from katsuobushi (bonito flakes), which serves as the base for its signature bowl, the Marukami Soba. This comes topped with two kinds of pork: incredibly tender, soft-bone soki (stewed spare ribs) and juicy sanmainiku (pork belly). Diners can choose between two styles of housemade noodles, curly (ちぢれ) or straight (ストレート), with many regulars recommending the curly ones for their ability to cling to the soup.

Reviewers consistently praise the broth's clean, profound flavour and the 'melt-in-your-mouth' quality of the pork. The generous portions and affordable prices are also a major draw, with many calling it outstanding value. A bowl of the signature soba was recently reported around ¥900–¥1,000, and a popular side of mozuku juushii (seasoned rice with seaweed) costs about ¥200–¥300. The main drawback is the restaurant's popularity, which means long waits are standard. The system can be confusing for first-timers: you must buy a food ticket from a cash-only vending machine, then write your name and car details on a waitlist.
