At ad hoc (アドック), Chef Tatsuhiro Takayama presents a highly personal and constantly evolving vision of modern French cuisine. Located in a quiet spot in Osaka's Fukushima district, the restaurant is built around seasonal, ingredient-led tasting menus. The kitchen is known for its creative freedom, pairing premium Japanese produce like Sempokushi oysters and tiger pufferfish with classic French concepts, resulting in unique, story-driven courses with precise, artistic plating.

Guests consistently praise the creativity and balance of the multi-course experience. Dishes that draw frequent acclaim include venison, often paired with notes of berry and chocolate, various morel and mushroom plates, and a signature pot-pie combining fugu (pufferfish) and pork. Desserts, such as corn ice cream or pistachio and matcha tarts, are also highlighted as a strong finish. The warm, attentive service, often including a personal greeting from the chef, and the well-regarded wine pairings complete the experience.

A minority of diners find some of the experimental dishes to have flavours that are too subtle, and a few have reported inconsistencies in the wine pairing. For international visitors, it's worth noting that staff's English proficiency can be limited, which may make detailed explanations of the complex dishes challenging.

The experience is priced at the high end, but most reviewers feel the quality and creativity justify the cost. Lunch is often cited as a particularly good value. Reviewers in 2024–2026 reported paying around ¥13,000–¥14,300 for lunch courses, with a full wine pairing costing approximately ¥15,400. The typical spend for dinner is between ¥20,000 and ¥29,999.
