The set menus guide diners through anago prepared as sashimi in three styles (including a much-lauded version with liver sauce), a delicate terrine, tempura, and grilled (shirayaki). Highlights for many are the rich anago sukiyaki and the final, theatrical presentation of clay-pot rice (donabe gohan). Reviewers describe the eel as exceptionally fresh, with a wonderful texture.
