Takahashi Kentaro offers a radical, ingredient-first interpretation of Edomae sushi that has quickly made it a destination in Osaka. The chef’s philosophy is evident in his shari (sushi rice), which is seasoned with red vinegar and served slightly firm, creating nigiri that reviewers describe as ‘melting’ in the mouth without feeling heavy.   • Reservations: Essential and very difficult to secure. Bookings are managed through the OMAKASE platform and open in cycles. Plan months ahead or look for last-minute cancellations. The restaurant does not accept reservations by phone.
  • Getting There: The restaurant is on the 2nd floor of the Sun System Nishitenma Gastro Plaza building in Nishitenma, Osaka. It is about a 9-minute walk from Yodoyabashi, Higashi-Umeda, or Kitashinchi stations.
  • Seating: All seating is at a single 10-seat counter made of hinoki wood. There are no private rooms.
