Chuka Soba Uosei (中華そば うお静) is a small, family-run ramen shop in Atami that has become a destination for noodle connoisseurs. Its reputation is built on exceptionally complex broths. The kitchen layers multiple types of niboshi (dried sardines) for its soy-based ramen and uses a potent clam stock for its signature salt-based bowl, creating a deep, aromatic base. These are paired with custom-made, springy noodles from the respected Kanno Seimen producer and large, juicy wontons filled with meat.
Guests consistently praise the two main offerings: the rich, savoury niboshi-shoyu ramen and the clean, fragrant kaidashi-shio (clam salt) ramen. The two different slices of chashu and the generous wontons are also highlights. Small, thoughtful additions like yuzu paste or a truffle-infused shichimi spice blend elevate the bowls further.
