Onjaku (温石) is a celebrated tea-kaiseki restaurant in the city of Yaizu, a place that serious diners consider worth a special journey. The experience is a disciplined expression of Japanese culinary tradition, centred on masterful charcoal cooking and pristine seafood sourced from the renowned local purveyor, Sasue Maeda Uoten. The meal unfolds at an intimate counter, often with a quiet, formal reverence for the ingredients and craft.

Guests consistently praise the chef's precise control over heat and the resulting clarity of flavour in the fish. Two signature dishes are frequently mentioned: an aji (horse mackerel) and cucumber roll, and the kinmedai (splendid alfonsino) with crisped scales. Other standout plates that capture the season include squid (jindo-ika), Doman-gani crab with noodles (nyumen), and a sequence of distinct rice courses that might feature corn or cured fish. The service is described as perfectly choreographed, and the meal concludes with the chef personally preparing matcha for each guest.

The main challenge is practical: securing a reservation is extremely difficult. Otherwise, there are few complaints. Reviewers note the omakase course recently cost between ¥24,200 and ¥25,300, with a final bill including drinks often landing between ¥25,000 and ¥30,000. A single cup of sake was noted at ¥1,650. Despite the price and difficulty, reviewers are unanimous that the experience represents excellent value, a worthy splurge for an exceptional meal.
