Oryori Saito (お料理 さいとう) is a testament to the riches of Shizuoka's Suruga Bay. This intimate counter restaurant has earned a devoted following for its uncompromising focus on ingredients sourced from the immediate vicinity, particularly seafood caught just hours before service. Chef Saito's philosophy is one of restraint and precision; through masterful control of heat and carefully prepared dashi, he allows the exceptional quality of the morning's catch to speak for itself.
Guests consistently praise the sequence of dishes, which showcases the best of the day. Highlights often include morning-caught fish like nodoguro (blackthroat seaperch) and shiro amadai (white tilefish), grilled to perfection. The meal is also punctuated by vivid local vegetables, handmade tofu, and a signature series of multiple rice courses to finish the savoury portion of the meal, which might feature shirasu (whitebait) or sakura-ebi (sakura shrimp). The experience culminates in a now-famous dessert: a giant strawberry daifuku, made to order using fruit from the chef's family farm.
While the food receives near-universal acclaim, guests note several practical challenges. The restaurant is in a remote residential area with minimal signage, and booking a seat is extremely difficult. There is only one seating per night, and the multi-hour course is described as very generous and filling. Reviewers report the omakase dinner costs between ¥22,000 and ¥30,000, with several noting bills around ¥25,190. Despite the high price and logistical hurdles, diners overwhelmingly feel it offers excellent value for a unique and memorable meal.
