In a quiet residential area of Shizuoka, Shun (瞬) has become a pilgrimage site for lovers of unagi (freshwater eel). The experience is a multi-course kaiseki menu built around the owner's mastery of 'jiyaki'—a grilling technique where the eel is cooked directly over charcoal without steaming first. This process, performed with intense focus at the intimate counter, results in a texture and depth of flavour that many reviewers describe as transcendent.

Guests consistently praise two unagi preparations above all: the unadorned 'shirayaki' (white-yaki) and the final 'unajū' rice box, both lauded for their crisp skin, tender flesh, and profound smoky aroma. Beyond the eel, the menu features inventive seasonal dishes that might include a signature corn pizza, a delicate eel tail nori roll, or a rich sea urchin baguette. The pacing and quality of the entire meal are frequently highlighted, with many visitors calling it one of Japan's finest unagi experiences.

The main drawback is operational. A few guests have found the service to be curt, and the restaurant phone is notoriously difficult to reach. More significantly, getting a seat is extremely challenging, with most reports indicating that new bookings are effectively closed to the public and require an introduction from a regular.

While the restaurant lists lunch from ¥4,000 and dinner from ¥15,000, recent guest bills show a different reality. Reviewers have reported paying ¥6,600 for a special lunch set and around ¥12,000 for a more extensive lunch. Full dinner omakase courses have recently cost between ¥51,500 and ¥55,000 per person. For those seeking a world-class unagi experience, Shun offers exceptional value; for a casual eel lunch, it is not the right choice.
