Simples (スィンプル) is a tightly focused counter restaurant built around one thing: showcasing exceptional seafood through a modern European lens. The experience is a theatrical omakase where chef-owner Higuchi applies precise temperature control and global seasonings to some of Japan's most prized fish, sourced from the legendary Sasue-Maeda purveyor.
