The restaurant's philosophy centres on carefully selected, high-fat pork, particularly the `rosu` (loin) cut. This is coated in coarse panko breadcrumbs and fried to create a delicate, airy shell that keeps the meat inside exceptionally tender and juicy. Guests consistently praise the melt-in-the-mouth texture of the `rosu katsu` and its light, crisp breading.
