Don Bravo is a small but ambitious restaurant in Chofu that has earned a devoted following for its highly personal take on Italian cuisine. Chef Takeshi Hirata blends classic Italian techniques with a deep respect for Japanese seasonality, resulting in a tasting menu that is both familiar and surprising. The kitchen's heart is a wood-fired oven, which is used not just for the restaurant's famous pizzas but also for dishes like a smoky bruschetta with iwashi (sardine).

The experience is built around a multi-course omakase menu. Diners consistently praise the flow of the meal, which might move from a delicate green-pea tart to a white asparagus fritto, through a pasta or risotto, and on to a main of lamb or a breaded cutlet before the grand finale: pizza. The signature dough, made with whole grains, whey, and even onion-infused water, is a standout. While classics like Margherita are available, the shirasu (whitebait) and karasumi (cured mullet roe) pizza is the one that receives the most acclaim. Many guests also commend the imaginative drink pairings, available in both alcoholic and non-alcoholic versions.

While the food is widely celebrated, a few reviewers have noted occasional brusque service and found the total bill, especially with drink pairings, to be high. However, most feel the experience represents good value, offering a level of creativity and quality that justifies the price. Reviewers in recent years reported paying around ¥16,500 for the dinner omakase, with lunch sets priced from ¥3,850. Pizzas are often around ¥2,000 or more. The alcoholic pairing can add ¥9,900–¥12,100 to the bill, while the non-alcoholic option is around ¥8,800.
