En Sui (炎水) offers a refined kaiseki experience driven by exceptional seasonal ingredients and classic technique. The chef builds menus around a meticulously prepared dashi, open-fire charcoal cooking, and showpiece seafood. The restaurant is particularly known for its multi-course preparations of natural fugu (pufferfish) and winter crab, making it a standout in Tokyo's competitive dining scene.

Guests consistently praise the technical execution and the quality of the produce. Highlights often include sashimi of natural tiger fugu, a signature fried shark fin (fukahire karaage) served in a small pot, elaborate Matsuba crab courses, and the final rice dish, which might be crab rice or a delicate chazuke with fugu dashi. The handmade soba noodles and well-considered sake pairings also receive frequent acclaim.

While most praise the intimate counter service, some visitors, particularly non-Japanese guests, have reported feeling overlooked or receiving less attention than regulars. There are also isolated reports of unexpected charges. For most, however, the focus remains on the food, which is widely considered to be of the highest standard.

Dinner is an omakase course, with reviewers in 2024–2026 paying between ¥35,000 and ¥60,000 depending on the season and ingredients. For example, one bill for a ¥35,000 course came to ¥39,300 with drinks, while special winter menus at ¥60,000 could reach ¥75,000–¥77,000 with pairings. Most guests find it offers excellent value for the quality of cooking and ingredients, though the experience may vary depending on the service received.
