Higashiazabu Amamoto (東麻布 天本) is one of Tokyo's most sought-after sushi experiences, where chef Masamichi Amamoto directs a masterful omakase. The meal is a performance, beginning with a long and inventive series of otsumami (small plates) before transitioning to a course of razor-sharp nigiri. A signature moment is the in-room searing of katsuo (bonito) over a blazing straw fire, a dramatic ritual that fills the small counter with smoke and aroma. Since 2024, the restaurant has become effectively introduction-only, making a seat here exceptionally difficult to secure.

Guests consistently praise the impeccable sourcing and execution. Standout dishes that appear in numerous reviews include the straw-seared katsuo, botan ebi (botan shrimp) marinated in Shaoxing wine, and a much-lauded tuna trio showcasing akami, chū-toro, and ō-toro cuts. Many diners single out the aji (horse mackerel) as a highlight, alongside creamy uni (sea urchin) and a distinctive castella-style tamago (egg omelette) often finished with honey.

Criticism is rarely directed at the food itself. The main challenge is access; the restaurant's move to an invitation-only system makes it nearly impossible for new, independent diners to book. Recent reports from 2025–2026 mention an omakase course at ¥52,800 plus 10% service, with final bills around ¥65,000 per person, or higher with drinks (one seafood and wine pairing reached ¥93,231). Sake and wine are noted as being surprisingly fairly priced for a venue of this caliber.
