Motsu-nabe Yamashou Ningyouchou ten (もつ鍋 やましょう 人形町店) brings the authentic flavour of Hakata's most famous dish, motsunabe, to the heart of Tokyo. The restaurant is known for its uncompromising approach, using large, plump, and gelatinous cuts of motsu (beef offal) in a choice of rich broths: classic soy, deep miso, or spicy miso. Beyond the standard hotpot, the restaurant also offers a signature 'mille-feuille' yama-shō nabe and, when available, a special ritual involving live Yobuko squid served first as sashimi and then as tempura.

Guests consistently praise the depth of the broth and the melt-in-your-mouth quality of the motsu. Popular side dishes that receive frequent mentions include the goma-saba (mackerel with sesame), crispy gobō (burdock root) salad, and savoury chicken wings. The meal traditionally concludes with either zosui (a rich rice porridge made with the remaining broth) or noodles like champon or udon, which are considered a highlight.

While overwhelmingly positive, a few reviews note occasional service lapses, such as brusque staff during peak hours. Some diners have found the Yobuko squid's freshness to be inconsistent, or certain cuts of motsu a bit too fatty. As is common in Japan, there is a small mandatory appetizer charge (otōshi) per person, which can surprise visitors unfamiliar with the custom.

Reviewers recently paid around ¥1,760 per person for the motsunabe (which has a two-person minimum) and ¥390 for the champon noodle finish. Despite a minority finding it slightly pricey with many extras, most diners consider it good value for the quality and generous portions.
