Ranmaru is the stage for a young, energetic chef whose creative take on Edomae-style sushi has made this small counter one of Tokyo's most talked-about reservations. The omakase is a performance, alternating between inventive small plates (tsumami) and precisely formed nigiri. The rice (shari), seasoned with red vinegar, is a signature, handled to create a texture that reviewers often describe as 'melting' in the mouth.

Guests consistently praise the exceptional quality of the seasonal seafood, from the three-stage tuna sequence (akami, chutoro, otoro) to highlights like blackthroat seaperch (nodoguro), kuruma prawn, and a special horse mackerel known as donchicchi aji. The most famous dish is the optional Ranmaru maki (らんまる巻き), an extravagant roll topped with fatty tuna, sea urchin, and salmon roe. Creative starters, such as a crab and sea urchin jelly, are also frequently mentioned.

The main challenge is securing a seat. Bookings are notoriously difficult, often requiring an introduction from a regular, and the nine-seat counter fills up months in advance.
