The kitchen's signature is its prosciutto with hot, puffy niocco fritto, a dish praised in nearly every review for its perfect execution.

Guests consistently rave about the pastas, from dense pici and house tagliatelle to the famous mushroom spaghetti and a cold pasta with uni and crab. The charcoal-grilling is another highlight, with the chefs treating each meat—be it Ezo deer, bone-in lamb, guinea fowl, or Obanazawa beef—with a distinct technique that makes each plate feel unique.
