Chef Yuichi Arai builds his omakase as a distinct narrative, showcasing multiple cuts of maguro from a single fish, each served at a precisely controlled temperature. This, combined with meticulously adjusted shari (sushi rice) and a sequence of refined starters, creates a powerful and coherent dining experience.
Guests consistently praise the tuna, from chūtoro to ōtoro and other varied cuts.
