Sushi Hashiguchi (鮨 はしぐち) is a temple to classical Edomae sushi, run by the veteran chef Hashiguchi and his wife from behind an eight-seat counter. The restaurant's reputation is built on its signature nigiri: the rice, or shari, is served near room temperature, so airy and light that it visibly 'sinks' under the weight of the fish and dissolves in the mouth. This is old-school technique at its most precise.
