Sushi Matsumoto (鮨 まつ本) is a small counter in Itabashi that has earned a devoted following for its exceptional value and creative, high-volume omakase. Unlike many sushi restaurants that serve appetizers before nigiri, here the course is a tightly paced interplay of inventive small dishes (tsumami) and expertly formed sushi. The chef uses a distinct shari (sushi rice) made with Tsuyahime rice and a blend of red and mild vinegars, a detail many reviewers single out for praise.

Guests consistently laud the quality and generosity of the seafood, with fatty tuna (o-toro), sea urchin (uni), and steamed abalone appearing frequently.
