An offshoot of the celebrated Sushi Nanba in Hibiya, this eight-seat bar in Shinjuku's Arakicho district is defined by its obsession with temperature. For each course, the staff presents a list detailing the exact temperature of both the topping (neta) and the rice (shari), calibrated to the single degree to achieve the perfect bite.
Reviewers consistently praise this meticulous approach, noting the small, tightly formed shari—made with either red or white vinegar depending on the fish—as a perfect vehicle. While the entire multi-course menu is lauded, certain dishes are repeatedly named as highlights. These include the signature simmered kinki (rockfish), iwashi (sardine), sumiika (ink squid), various cuts of toro, and a rich uni (sea urchin) hand-roll.
