At Sushi Tsubomi (鮨 つぼみ), chef Kawaguchi, a protégé of the world-renowned chef Saito, offers a masterclass in precision. What sets this counter apart is the obsessive attention to the rice, or shari. Its temperature and texture are meticulously adjusted for each piece of seasonal fish, creating a balance that guests consistently describe as so perfect it simply 'melts' in the mouth.

The experience is defined by a calm, welcoming atmosphere at the counter and a succession of standout nigiri. Reviewers repeatedly praise the quality of the toppings, with a few stars appearing again and again: the rich red uni (赤雲丹), delicate white shrimp (白海老), cuts of medium-fatty and fatty tuna (chu-toro and o-toro), exceptionally soft braised octopus (煮タコ), and sweet kuruma-ebi prawn. The uni-topped futomaki roll is another frequently mentioned highlight.

While the experience is overwhelmingly positive, some visitors have faced practical challenges. Several have reported issues with third-party booking platforms like AutoReserve, with reservations not being honoured on arrival. A few diners also noted some variability in execution when seated at the smaller, secondary counter staffed by junior chefs.
