The restaurant is a deep dive into the ingredient, showcasing it in three distinct preparations that draw crowds of locals and visitors alike. The atmosphere is famously energetic and cramped, offering a classic, no-frills Tokyo dining experience centered on excellent food.

The undisputed star of the menu is the yudetan, or boiled tongue. Reviewers consistently describe it as revelatory — silken, fork-tender slices served simply with wasabi that demonstrate a completely different texture from what many expect. A close second is the tan shichuu, a rich and hearty beef-tongue stew praised for its depth of flavour.
