Every bagel is built from one of three distinct doughs. “Fuka” is soft and fluffy, like a classic Japanese bread. “Mochi” is chewy and satisfying, made with a long-fermentation process. And “mugyu” is dense and firm, with a high-tension dough for a serious bite. This foundation is then combined with a rotating menu of over 50 inventive fillings, turning a simple bagel into a unique pastry-like creation.
Regulars and first-timers alike praise the ability to compare the different textures. Popular flavours that guests consistently recommend include the sweet Mont-Blanc cream, the savoury-sweet an-butter salt (red bean paste and salted butter), and more unusual combinations like blue cheese with edamame or matcha with azuki beans. However, visitors expecting a classic New York-style bagel may be disappointed; many describe the products here as more akin to filled pastries or breads.
