At an intimate eight-seat counter, Chef Motoyoshi Kazuhito employs modern techniques, including liquid nitrogen and carefully controlled oil blends, to achieve a paper-thin coating that crisps instantly without absorbing oil. Signature moments include a large shiso leaf topped with fresh, raw uni, a perfect contrast of textures.
