Ubuka is a specialist restaurant in the Arakicho neighbourhood with a singular focus: a multi-course omakase menu built entirely around crab and shrimp. The experience is a deep dive into the world of crustaceans, founded on a rich dashi made only from their shells and showcasing a variety of species prepared with technical precision.

Guests consistently praise the quality and breadth of the shellfish, from horsehair crab (kegani) to snow crab (zuwaigani). Signature moments that draw near-universal acclaim include a dense, flavour-packed crab terrine, a perfectly fried kuruma-ebi prawn served hot with its own rich miso, and the final course of crab rice cooked in a traditional clay pot (donabe). The thoughtful drink pairings are also frequently noted.

The main challenge at Ubuka is logistical: securing a reservation is extremely difficult. A few diners also find that some richer preparations, like cheese-based gratins, can occasionally overpower the delicate sweetness of the crab. The dining room is small, and seating can feel close to neighbouring tables.

Dinner courses are priced from ¥15,000–¥19,999, though reviewers in 2023–2025 reported paying between ¥16,500 and ¥27,500 for the set menu, depending on the season. A 10% service charge and drinks are extra. For diners who adore shellfish, Ubuka is widely considered excellent value and a worthy special-occasion meal.
