The experience is defined by two key elements: the firm, chewy texture (koshi) of the handmade noodles and the exceptionally clear, fragrant broth made from iriko (dried sardines). This pure dashi is the star of simple bowls like kake (hot) or hiyakake (cold), allowing the quality of the ingredients to shine.
Alongside the noodles, guests consistently praise the tempura, which is fried to order and notably larger than average. The chicken tempura (kashiwa-ten) and fish-cake tempura (chikuwa-ten) are perennial favourites. Despite a near-constant queue outside, service is famously efficient, with staff often taking orders while you wait to ensure a quick turnover. The main drawback is the shop's popularity; popular tempura items like shrimp (ebi-ten) and certain beef options can sell out early in the service.
