USHIO offers a unique take on one of Japan's most beloved comfort foods. Instead of the usual heavy, oily pancake, this Roppongi izakaya specializes in a light, vegetable-forward okonomiyaki cooked in the Hamamatsu style (遠州焼き, Enshuyaki), which uses no oil and mixes pickled daikon into the batter. The result is a delicate, almost fluffy creation that regulars describe as 'drinkable'. Because all cooking is done in the kitchen, not on tabletop grills, you can enjoy your meal without leaving in a cloud of smoke.

Guests consistently praise the signature 'Inaka' okonomiyaki, but also love the creative variations like the 'American' (with hamburger and cheese) and the 'Italian'.
