Rather than using a single all-purpose sauce, each part of the animal is paired with a bespoke house-made tare or salt designed to bring out its unique texture and flavour.

Guests consistently praise the freshness and variety of the cuts, including classics like tongue (tan), kalbi, and premium wagyu harami and sagari. The offal, particularly the premium liver (jō-rebā) and first-stomach (mino), is frequently singled out for its quality. Another signature that appears in many reviews is the 'Yakiniku-ya no Ebi-sashi', a dish of seasoned raw prawn where the head is later roasted and served. The staff are noted for being attentive, often coaching diners at the counter on ideal grilling times for each cut.
