The proprietors focus on premium, aged pork from regional breeds like Kinka and Kozabuta. Each cutlet is cooked low and slow, resulting in a characteristically tender, slightly pink center and sweet, rendered fat that melts in the mouth. The experience is deliberately minimalist: the meat is so flavourful it's intended to be tasted first on its own, then with a pinch of Mongolian rock salt.

Guests consistently praise this focused approach. The meat’s profound tenderness, the clean sweetness of the fat, and the light, crisp panko batter are highlights in nearly every review. The signature aged pork loin cutlet set, 純粋金華豚 熟成ロースかつ定食, is repeatedly singled out as a destination-worthy dish, as is the thick-cut 特撰/高座豚の厚切りロース.
