Waka Zushi (若鮨) is a classic Kofu machi-zushi, the kind of family neighbourhood sushi bar that predates the conveyor belt. Its reputation rests on scale: very large, thick slices of fish on hearty rice, with the option of akazu (red-vinegar) rice. Signatures include the ippon anago, a whole conger eel laid across the rice, and a 55cm sushi built for show. At lunch every set comes with a large bowl of fish-broth soup that regulars rave about.

Almost every review mentions the size and freshness of the fish. The daily kaisen-don (seafood rice bowl) and the hiru-don lunch bowl are repeatedly described as overflowing, and several diners could not finish their chirashi. Guests also praise the chawanmushi (savoury egg custard), the free osuimono clear soup, the seasonal tamagoyaki made with eel or clams, and side dishes such as shirako (cod milt). Foreign visitors note friendly, patient service and an attractive modern dining room.

A minority of recent reviews report a dip in quality. Nigiri can be thin or uneven depending on the chef, one diner waited 30 minutes for sashimi, and a holiday course arrived all at once within 10 minutes. Some staff came across as brusque when the room was busy. Isolated reports mention a foreign object in food, fishy-smelling glasses and an ignored soy allergy request.

Typical spend is ¥3,000–3,999 at lunch and ¥6,000–7,999 at dinner, though cheaper sets exist. Between 2024 and 2026 reviewers paid around ¥1,300–1,485 for the lunch nigiri or hiru-don and ¥2,200 for the daily kaisen-don. The 'appare yokozuna' nigiri cost about ¥3,960, or ¥4,455 with salad and chawanmushi; the 'miracle don' was ¥5,500 and a course ¥5,000. Reviewers consistently call the portion-to-price ratio outstanding for counter sushi, especially at lunch, although it costs more than chain sushi.
