Pes. (Pes.) is an intimate eight-seat counter in Nagoya run by a single chef. It's a stage for a unique tasting menu that combines Latin American, particularly Peruvian, cooking with classic Italian elements, with a strong focus on cooking over a wood fire (薪, maki). Guests consistently praise the signature dishes. The Pesto Genovese, served with wide, lasagna-style pasta and house-made brioche, is called exceptional for its intense basil flavour. The wood-grilled wagyu, often a rump cut, is another highlight, valued for its smoky aroma. Other praised dishes include the fresh ceviche, dressed in a classic Peruvian 'tiger's milk' marinade.
The one-chef format means the meal is long, often lasting two to three hours with a strict, single start time for all guests. The smoke from the open fire is a key part of the atmosphere but can cling to clothes.
