Kushi Katsu Hitokuchi is a small, family-operated counter in Onomichi that elevates deep-fried skewers to an art form. The focus is on pristine seafood, fried with an exceptionally light touch. What truly sets it apart is the ritual: for each skewer served, the owner personally instructs you on the ideal way to eat it, from which condiment to use to which part to eat first.
Guests consistently praise the freshness and delicate batter. The kisu (Japanese whiting) and anago (conger eel) are considered essential orders, often served with specific instructions to use lemon and salt on one part and wasabi-soy on another. Other popular choices include asari (clams), seasonal kaki (oysters), and shrimp. The oil is changed periodically during service to ensure the flavours of delicate items are not compromised.
The intimate setting has its drawbacks. With only about eleven seats, waits can be long, and popular items often sell out early. A few diners have found the owner's direct instructions to be brusque, but most appreciate it as part of the dedicated, hands-on service style.
Dinner typically costs between ¥4,000 and ¥5,000 per person. Reviewers recently reported a bill for two at ¥8,900, and clam skewers (asari) were noted at around ¥800. Visitors agree that the quality and technique offer excellent value, a world away from standard chain kushikatsu.
