Tatsu (お好み焼き 辰) is a small, two-person okonomiyaki shop near Hiroshima Station that has earned a loyal following for its masterful execution of the city's signature dish. The owner's focused, almost ritualistic technique is a show in itself, producing an okonomiyaki with a pronounced 'parifuwa' texture: a perfect contrast between the crisp, pan-fried edges of the soba or udon noodles and the sweet, gently steamed cabbage within. Each portion is finished with a generous heap of chopped green onion and served with house condiments like karashi mayo to vary the flavour.

Guests consistently praise the signature niku-tama soba (pork, egg, and soba noodles) for its balanced sauce and exceptional crispy texture. The udon noodle version is also popular. For toppings, reviewers often recommend adding ikaten (squid tempura) or mochi (sticky rice cake). Many visitors enjoy the friendly, chatty atmosphere created by the owners and the view of the craft from the counter seats. A small, complimentary coffee after the meal at lunchtime is another welcome touch.

The main drawback is the restaurant's tiny size, with just three counter seats and a small tatami area, which often leads to queues and occasional early closures if they sell out.
