Wagyu Lab K is not a typical yakiniku restaurant where you cook yourself. The focus is exclusively on 榊山牛 (Sakakiyama beef), a local Hiroshima brand known for its low melting point and intense flavour, including rare cuts and organ meats not often seen on other menus.

Standout cuts include the harami (skirt steak) and various preparations of tongue.
