Guests consistently praise the broth for its remarkable combination of depth and clarity. The signature is a choice between *shoyu* (soy sauce) or *shio* (salt) bases, both lauded for their clean but powerful flavour. These are paired with unique, thin, flat homemade noodles that reviewers describe as silky and reminiscent of narrow kishi-men. Other standout components include the juicy wontons and two types of exceptionally tender char-shu (pork and chicken).
